Delicious Salad Recipes of SUMMER 2023

Counting down my favorite Salads of Summer 2023! If you have been following me on Instagram this year you will have been part of my super fun and tasty Summer Salad Series! From delicious green salads packed with fresh and roasted veggies, healthy meats and yummy cheeses, these summer salad recipes boast all sorts of ingredients thrown in the mix! Check out this list of my favorite salads I pigged out on this Summer like my Panzanella, Smoked Salmon Boursin Orzo Salad, or this delish BBQ Tofu, Burrata & Avo Salad. You will LOVE how creative and flavorful these salads are. Feel free to swap out whatever you have in your fridge and pantry that make sense and ENJOY them all year long!



 

#1 - BBQ TOFU BURRATA & AVOCADO MAC & ARUGULA SALAD

 



#2 ROASTED CAULIFLOWER TACO SALAD

Here is how to make this yummy SPICY salad:


INGREDIENTS

2-3 cups of Spring salad greens

2-3 cups of roasted cauliflower, seasoned with taco seasoning

1/4 red onion, sliced very thin

4 oz cubed Spicy Chipotle Cheddar cheese

8-10 grape tomatoes, cut in half

1 avocado, sliced

2-3 tablespoons chopped cilantro

Drizzle of Durant fuzed Lemon olive oil - you can find their gorgeous collection of oils, vinegars, salts and other yummers HERE


Taco Salad Dressing

1/4 cup sour cream

1/4 cup mayo

1-2 tablespoons hot sauce - I like Cholula or Tapatio

1/4 cup salsa

Squeeze of 1 lemon or lime

1 tsp taco seasoning


DIRECTIONS

  1. Clean and prepare the cauliflower for roasting. Cut it into small pieces and toss onto a baking sheet with olive oil, taco seasoning and bake at 425 for about 20 minutes

  2. Prepare the Taco Salad Dressing by combining the sour cream, mayo, hot sauce, salsa, lemon juice, and taco seasoning and stir until creamy. Set aside.

  3. Lay down a nice bed of greens on a medium-large sized platter and drizzle with a bit of the lemon olive oil

  4. Cube the cheese and toss onto the salad

  5. Cut the tomatoes and onions and toss onto the salad

  6. Remove the cauliflower from the oven and let cool slightly then place on the top of the salad

  7. Drizzle with the dressing, cilantro, avocado and any other yummy taco salad toppings you enjoy!
