Honey Mustard Tortellini, Potatoes, & Greens Salad / Goodbye Summer Salads
A bomb display of savory green beans, fried potatoes, olives, marinated mushrooms, chickpeas, guac, smoked white cheddar cheese, and greens drenched in a delicious honey mustard dressing you are going to absolutely LOVE!
HONEY MUSTARD POTATO GREEN BEAN TORTELLINI & GREENS SALAD
🍝The Pasta: lb cooked Tortellini pasta noodles + “The Pasta-Trinity” (components every bombbbbb pasta salad must have in my opinion) ->
🧀The Cheese: @tillamook Smoked white cheddar black pepper + Parmesan sprinkle at the end
🥔The Crunchers: Green beans, fried potatoes, chickpeas, black olives, tomatoes
🥬The Greens: Spring salad mix, smooshed up avocado
HONEY MUSTARD DRESSING (yes you can drink it)
1/4 C olive oil, 1/4 C red wine vinegar, 1/4 C lemon juice, 1 T grainy mustard, 2 T honey, 1 Tsp chopped garlic, 1 Tsp sea salt, 1 /2 Tsp pepper
Combine the dressing components in a little mason jar with a lid and shake to oblivion. Toss over the salad ingredients above.
