🌈 Crafting a Rainbow and Leprechaun Hummus Boards for St. Patrick's Day 🍀

St. Patrick's Day is just around the corner, and what better way to celebrate than with vibrant and whimsical boards that's sure to dazzle your guests? In this blog post, we'll show you how to create two delightful platters: a rainbow bursting with fresh fruit and a charming leprechaun brought to life with savory ingredients. Let's dive in!


🌈 Rainbow Hummus Board 🌈


Ingredients:

9 fresh strawberries, cut into 18 “strawberry hearts”

14-16 fresh raspberries

1 yellow peach, cut into bite-sized pieces

6 large green grapes, sliced in half horizontally

1 Persian cucumber, sliced into discs

5 large Oregon blackberries

3 oz brie “tube”, sliced into 6 slices


Preparation:


  1. Begin by slicing your strawberries into adorable heart shapes. Simply cut off the top of the strawberry in a V-shape, then slice horizontally to create two small hearts.

  2. Cube your peach into bite-sized pieces and arrange them alongside the strawberries and raspberries.

  3. Slice your green grapes and cucumber, then place them on the board to represent the green hues of the rainbow.

  4. Fill in the rainbow with fresh blackberries, adding a burst of deep purple.

  5. Finally, adorn each end of the rainbow with three slices of brie for a creamy finish.

  6. Serve your rainbow hummus board with honey and crackers on the side for a delightful St. Patrick's Day treat!


 


✨ Leprechaun Hummus Board ✨


Ingredients:

2 cups creamy original hummus

1 yellow bell pepper, sliced into thin strips

1 Persian cucumber, sliced into thin disks

8 oz aged asiago, crumbled

1 slice pepper jack cheese

10-12 Oregon blackberries

2 cups Marcona almonds

22-24 whole pitted green Castlevetrano olives

20-22 dill pickle slices


Preparation:


  1. Line your platter with parchment paper to protect the surface.

  2. Spread the hummus in the center of your platter, shaping it into a round face.

  3. Use yellow peppers to fashion the leprechaun's hair and beard, and create a hat using blackberries, cucumbers, olives, and pickles.

  4. Add intricate details to the hat using pepper jack cheese, and top it off with two yellow peppers.

  5. Surround your leprechaun with crumbled asiago cheese, Marcona almonds, pickles, and olives.

  6. Bring your leprechaun to life by adding cucumber slices for eyes, a small tomato for a nose, and yellow peppers for eyebrows and a mouth.
