If you have tried a queso dip at a restaurant and liked it and wanted to recreate a similar one, well, I have the answer for you. The queso in the jar at the store is nothing compared to this dip. Serve with your favorite corn or tortilla chips for an afternoon snack or a fun snack at a potluck.
2 Tbsp butter
2 tbsp flour
1 clove garlic, chopped
1/4 onion, finely chopped
1 cup milk
2 cups Mexican cheese, shredded
1 cup salsa con queso
Melt the butter over medium heat, then add onion and garlic salt/pepper and sauté until soft. Whisk in the flour and cook for about a minute then slowly add the milk until it forms a creamy mixture. Now add your cheeses and salsa.
Topping: sautéed mushrooms, onions and jalapeños + cilantro and broil in the oven for a minute
Serve with chips once cooled.
