About the Recipe

Warm and comforting chipotle taco pasta combines savory, crunchy, and hearty flavors. This dish can be made with a vegan meatless crumble and vegan cheese to make it a vegan dish. Or it can be made with ground beef and regular cheese. It's up to you and your preference. I would also make this a great potluck dish for any time of year. This one is sure to be a hit!

Ingredients

  • Butter

  • 1 package of  Macaroni Pasta

  • 1 package of  Trader Joe’s Meatless crumbles (You can used ground beef too)

  • Shredded cheddar cheese

  • Grape tomatoes, sliced

  • Avocado, diced

  • Chipotle Bitchin Sauce

  • Elote corn chip dippers Trader Joes

  • Garlic powder

  • Onion powder

  • Chili powder

  • Cumin

  • Salt

  • Pepper

  • Tamed pickled jalapeños @mezzetta

  • Cilantro

Preparation

  1. Preheat Oven 375

  2. Cook pasta and Meatless crumbles according to the package

  3. In a big bowl melt butter and toss with pasta. Add Meatless crumble, Cheddar Cheese, Tomatoes, Jalapenos, Sauce, and spices.

  4. Bake for 15 minutes then top with chips and cilantro.
