I love this buttery veggie pasta; it’s just the ticket for a delicious meal at dinner or lunchtime. This is a quick one-pot recipe that is so tasty. I try to pack the veggies with as many flavors and colors as possible. It makes the meal so satisfying, and it’s a meal the whole family will love.
Ingredients
Rotini Pasta, cooked
Boursin cheese garlic & fine herb
Zucchini, diced
Mushrooms, diced
Tomatoes, diced
Parmesan, shredded
Grape Tomatoes, sliced
Sun dried Tomato Feta
Cilantro, chopped
Pumpkin seeds
Garlic, minced
onion powders
Olive oil
Salt & Pepper
Preparation
Cook pasta according to instructions on the box.
In a large pot heat up olive oil and saute zucchini, mushrooms and tomatoes,
In the same pot add the cooked pasta and all other ingredients and stir.
