About the Recipe

Ingredients

- Sushi Rice, Cooked

- Arugula

- Radicchio, chopped

- Red bell peppers, chopped

- Potatoes, chopped small

- Zucchini, chopped

- Onion, chopped

- Tropical mango, sliced

- Cilantro

- Lime

- Basil


Red curry Ingredients:

- 2 tbsp Red Curry, Maeploy Kitchen

- 1 can of coconut milk

- 1-2 tbsp oil

- 1-2 tbsp soy sauce depending on taste

- salt & pepper to taste

Preparation

  1. Cook Sushi Rice according to package,

  2. Heat the oil in a pan on medium-high and then add the onion, arugula, zucchini, red bell peppers, radicchio, potatoes and season with salt and pepper.

  3. Once the veggies begin to soften, add the curry paste, the coconut milk and soy sauce.

  4. Simmer on low until the veggies are tender.

  5. Serve immediately over rice with cilantro, lime, basil, mango as toppings,

  6. You can also turn it into a platter by placing your curry and rice in big bowls and your toppings in smaller bowls set out on a big board for a DIY curry board.
