Tacos are definitely in my top 5 favorite foods. A warm sheet pan of tacos with cheese has to be just about the best food out there. The tortillas are so crunchy, and the filling is flavorful and fantastic. This is a satisfying meal that comes together in less than 30 minutes.
1 package of Corn tortillas
Cheddar cheese, shredded
For the sauce:
Chipotle peppers in adobo or chipotle salsa
Salt and pepper
Saute diced potatoes in a pan with butter/olive oil mix and season with garlic and onion powders, chili powder and salt and pepper until crispy. Set aside.
Warm the tortillas individually in a pan until pliable then mold into a taco shape using a rack or I like to use my rolling pin
Make the sauce by mixing all the ingredients together in a bowl
Assemble the tacos with cheese, sauteed veggies and sauce. And lay them on a sheet pan lined with parchment paper..
Bake at 425 for about 15 minutes or until crispy and melty
Top with cilantro and jalapeños
